Stuffed…chicken…parmesan…just let that sink in for a moment. I can eat chicken smothered in anything so when I came across this recipe, it was a win-win. However, my love for STUFFED things…stuffed crust, stuffed chicken, stuffing, whatever…really took this to a whole new level for me. Let’s not forget about the parmesan either. We go through bottles of that stuff a week at our house, I put it on everything. So, when I came across an online recipe for stuffed chicken parmesan I thought it was a for sure must try.
Truthfully, even though there are quite a few ingredients to this meal…it wasn’t too bad. Especially for how good it tastes nice and hot, right out of the oven. Slicing open the chicken and watching the melted cheese run down the chicken…it’s heavenly.
Stuffed Chicken Parmesan
- 2 Chicken Breasts
- 1/2 Cup shredded mozzarella cheese
- 1.5 Cups of my homemade breadcrumbs (see Italian Breadcrumbs post)
- 2 Whole eggs
- 1/2 Cup Olive Oil
- 1 Cup of flour
- Basil (Fresh or from a bottle)
- Salt and pepper to taste
- 1 Cup parmesan cheese
- 1 Jar of spaghetti sauce
- 1-2 Cups of cooked spaghetti
To begin season the chicken with a little salt and pepper
Next take a sharp knife and carefully make slits about halfway through the chicken
Take half of the shredded mozzarella cheese and begin stuffing each chicken breast
You do not have to toothpick the side unless you want to. I simply patted the chicken together before dipping it in the flour and it stayed together. Go ahead and coat the chicken in the flour
Make sure you get it completely coated. Next dip the chicken in the eggs
Lastly, coat the chicken in the breadcrumbs! Pat the crumbs all over the chicken making sure it is completely covered
Go ahead and put a skillet on medium heat with the Olive Oil and let it get hot for about 2-3 minutes. Next put the breaded chicken in the skillet.
Let the chicken sizzle for about 4-6 minutes in the oil on each side. I do 4-6 minutes which makes the sides a little crunchier. It will look almost burnt but it will simply give the chicken more flavor when it bakes in the oven.
Next take a small dish out covering the bottom with the spaghetti sauce
Lay the chicken breasts on top of the sauce
Go ahead and just cover the top of the chicken breasts with a little more spaghetti sauce
Then get real crazy and just spread that parmesan cheese all over the chicken
Lastly, sprinkle the basil over the top of the chicken
Turn the oven on 350 and put the dish in covered for 20 minutes. When it is done it will look something like this:
I then take the cooked spaghetti with a little spaghetti sauce and put it on the plate. Add one of the stuffed chickens on top and you will have stuffed chicken parmesan!
It is seriously SO delicious but doesn’t take very much to feel FULL. Oh, and if you’re anything like me and could not wait to cut into it to see this…get super excited and skip the salad and go straight for cutting the chicken in half! It will not disappoint.
This is definitely a hearty Sunday dinner and is definitely a new favorite for us. I hope everyone gives this a try and loves it as much as we did!!
