Peanut Butter Jelly Cupcakes

I recently was challenged to a bake off at work. I thought for sure I could whip up a few cupcakes and close the deal. When I tried to think of recipes that were for sure winners…my peanut butter and jelly recipe came to mind. Plus it was going to be during the lunch hour and I thought…hey, how fitting to take a lunch sandwich and make it into a cupcake.

To start I used a basic yellow cake mix! Using the normal oil, eggs, and water. I then add about a 1/4 cup of creamy peanut butter just to give the yellow cake a bit of a peanut butter flavor. Pop them in the oven on 350 for about 14 minutes and they come out perfect!

What makes these cupcakes so amazing is the peanut butter frosting.

Peanut butter frosting:

  • 1 Cup butter, Room Temperature
  • 2 Cups Creamy Peanut Butter
  • 6 Tablespoons of Milk
  • 4 Cups Powdered Sugar
  • 1 Tspn Vanilla

This recipe definitely makes a TON of frosting. I believe I typically frost about 2 dozen cupcakes with this recipe so if you don’t need as much – cut it in half.

First I mix the butter and peanut butter together!

Mix the two until it has a whipped consistency and then begin adding the powdered sugar and slowly mix in the milk

Once this is all mixed together and has a smooth consistency, you are good to go! Begin taking out the middles of the peanut butter/yellow cupcakes.

I ended up just using the end of one of my frosting tips that was thick and took the core out of each one. I typically pipe the jelly into these bad boys but in the past I have added too much jelly and so to avoid doing that I took the middles out! Next, just using regular grape jelly I took a spoon and put them into each middle. This can be a little messy so be careful!

Once I had them all filled, I put my peanut butter frosting into a piping bag and began piping the peanut butter frosting!

 I am a huge fan of this peanut butter frosting so I put a LOT on each cupcake. NO regrets.

Last, I garnish each one with a chocolate covered peanut and wallah!

I’m telling you – these are seriously SO good. These cupcakes are what won the bake off contest at work for me. It’s such a sweet treat with a good jelly filling that no one can resist. I definitely found myself going back for more and more of these yesterday and wasn’t even upset about it today when I had to run them off. They are worth it!

After making these I began to wonder what else I could do with them. The awesome thing about the peanut butter frosting is that once you try this for yourself to see how great it is…you can use this frosting for any other type of cupcake. I have made chocolate cupcakes with this frosting and people loved those as well. The options are endless. I am also a secret peanut butter, banana sandwich lover and began to wonder how amazing these would taste with a banana cupcake, jelly filling, and peanut butter frosting…BUT we’ll save that for another time!

I also gave these a real classic name: not your mom’s peanut butter and jelly. I mean, I’m sure everyone’s mom’s pb&j’s were great…but these are AMAZING!
