I love salads.
Chicken caesar salad, cobb salad, southwest salad, fruit salad, tuna salad, and my absolute favorite…chicken salad. My fiance and I consider it a “vacation” lunch item. I only make it when we go on vacation and for however many days we are on vacation is how many days straight we eat chicken salad sandwiches for lunch. We LOVE it.
However, when it comes to chicken salad and truthfully for me – any salad in general…I can be pretty picky. I don’t like things that are too crunchy or may be a weird texture to me. Such things as: onions, grapes, celery…you know all the good things that most people put in their salads. I know, I find it interesting myself and it makes absolutely no sense at all why I don’t like those things in salads.
So…I took some shredded chicken and only added a few simple ingredients that I really enjoy. It’s simple and yet still amazingly delicious!
Chicken Salad Ingredients: (Makes a big batch about 10-15 servings)
Begin by throwing the chicken breasts in a crockpot with 1 cup chicken stock. Before putting the lid on add just a little salt and pepper to the chicken. Turn the crockpot on to high and let those babies cook for about 5 hours. The smell will be amazing and you will feel the need to take the lid off to check out what’s going on…I highly suggest doing so – it’s amazing!
After about 5 hours the chicken will look a lot like the photo above! It will smell heavenly and you’ll know it’s done when you stick a fork in it and you can barely pick the whole piece of chicken up without it starting to slowly fall apart.
Scoop the each chicken breast into a bowl and with two forks begin shredding the chicken!
Once you shred all of the chicken you should have bowl of yummy, warm, slow cooked chicken!
Now that the chicken is completely shredded you can begin adding the rest of the ingredients. I also prefer to do this while the chicken is nice and warm because it melts some of the mayonnaise and mixes better.
So next I chop up about a cup and a half of cashews. I don’t mince them, I really just cut them into smaller halves or thirds. I LOVE cashews, so truthfully I typically leave a handful whole just so I can enjoy a whole cashew in some bites!
Next I cut up the green onions and add them with the cashews to the mix!
Then I add my real mayonnaise and fresh dill. The dill will smell so amazing against the chicken and fresh green onion. I seriously have such a hard time making this and not eat any of it at the same time.
Last but not least, I mix it all together trying not to spread it too thin.
This is great on crackers or a nice, thick 12 grain whole wheat bread. I also love to put some of this between a nice thick croissant. It really is a simple recipe and a simple chicken salad mix for some of you who are used to those chicken salad recipes with a million ingredients!
